Recipes for hippocras varied from place to place and time to time, but its use remained constant and international. John Russell's Boke of Nurture has one hippocras recipe set to rhyme:

"Good son, to make ypocras, hit were gret lernynge,
and for to take the spice therto aftur the proporcionynge,
Gynger, Synamome, Graynis, Sugar, Turnesole (that is good colourynge);
for commyn peple Gynger, Canelle, longe pepur, hony aftur claryfiynge."

A hippocras could be made out of either red or white wine, but the warmer and moister properties of red wine were usually preferred for good digestion and other health aspects.

"He drynketh ypocras, clarree, and vernage" - The Merchant's Tale

Galiones was another spiced wine drink named after a famous physician, the Greek anatomist Claudius Galen. Vernage was a sweet Italian wine; clarree was a spiced wine sweetened with honey.
