Stewed Hen

DESCRIPTION: Chicken stewed in wine & herbs, & served with fruit in a wine sauce

  • 1 chicken, in pieces
  • 1 bottle red wine (750 mll)
  • 1 sprig fresh parsley, minced fine
  • 1/2 tsp. each salt, sage, hyssop, & thyme
  • pinch saffron
Place the chicken in a roaster or a roasting pan. Add the salt and herbs and enough wine to cover half the chicken. Cover securely and cook at 375º F for 1 1/2 hours, or until well done. Add extra wine as necessary - do not let it become dry. Remove the chicken from the roaster and immediately before serving cover with Wine Sauce.
