After rolling out the cookies according to the Mock Springerle recipe, do not discard the remaining bits of rolled dough. Instead, with a spatula or knife, cut them into small rectangles, squares, triangles, etc. - the more variety & inconsistency, the better! Place the kinderbitz on a baking sheet lined with parchment or baking paper, and bake at 300º F for 14-15 monutes. DO NOT OVERBAKE. Remove from heat & cool on a wire rack. As soon as they have cooled, place in an air-tight container. They will last several weeks. |
