Couscous with Dried Fruits & Nuts
Cinnamon couscous with nuts, raisins, dates, & apricots - contributed by Becky Hoover
  • 1/2 cup sugar
  • 1/2-1 tsp. ground cinnamon
  • 1/4 cup butter, melted
  • 1 lb. (2-1/2 cups) Couscous, steamed
  • 3/4 cup raisins
  • 3/4 cup chopped, pitted dates
  • 3/4 cup chopped dried apricots
  • 3/4 cup chopped, blanched almonds
  • 1/3 cup pine nuts
  • 1 cup almond milk
Stir sugar and cinnamon into butter.  Pour over Couscous, tossing to coat.  Stir in all fruit and nuts.  Add almond milk to moisten.
