Fritters
Lemon-flavored sugared fritters - contributed by Earl Bless
  • 8 oz water
  • 5 TBS pure olive oil or vegetable oil
  • 1 strip of lemon rind
  • 1/2 tsp salt
  • 7 oz plain flour
  • Deep frying oil
Combine water, lemon rind and oil and bring to a boil. Remove lemon rind, add salt to the flour and combine the water and flour in a large bowl. Beat with a wooden spoon quickly over low heat until it forms a ball and is stiff. Take off heat. Heat up frying oil to 365º F. Pack a wide tipped piping bag with flour mixture and pipe strings into hot oil. Remove when golden brown and drain. Dredge in crystal sugar and serve.

NOTE: Best served soon after making. For eight.
