Garlic Soup
A soup of chicken broth, garlic, & herbs - contributed by Earl Bless
  • 6 TBS extra virgin olive oil
  • 6 cloves of garlic chopped
  • 10 1/2 ounces of bread cubed
  • 1 tsp paprika
  • 3 pints chicken broth
  • chopped parsley
Heat oil in a soup pot. Add cubed bread and cook until golden brown. Add paprika and then the chicken broth. Simmer 5-10 minutes until the bread dissolves; you can put the soup in a blender or food processor if you would like to make smoother. Serve with chopped parsley on top.
