Lamb Stew

DESCRIPTION: Lamb stew thickened with honey


  • 1 lb. cooked lamb roast, in stewing pieces
  • 2 cup chopped parsley
  • 1 medium onion, finely chopped
  • 1 cinnamon stick
  • salt & pepper - to taste
  • pinch of saffron
  • 2 tsp. red wine vinegar
  • 1 cup red wine
  • 4 tsp. honey
Combine all ingredients except honey in a sauce pan; bring to a boil, then reduce heat to simmer. Cook until the onion is soft. Add honey and cook for several minutes, until the stew thickens. Remove cinnamon stick; serve.
