Three Sauces for Chicken

DESCRIPTION: Appropriate sauces for
chicken

2 Tbs. butter

1 medium onion, chopped

1/2 tsp. salt

1/4 tsp. freshly ground pepper

1 Tbs. dried bread crumbs

1 Tbs. dry sherry
-
juice of 1 lemon & 1 orange
Melt the butter in a saucepan and sauté the onion until
it is
tender. Add remaining ingredients and simmer for about 5 minutes. Serve
with chicken or capon.

2 Tbs. chopped parsley

1 tsp. cider vinegar OR: 1 Tbs. lime juice

1 tsp. sugar
Melt the butter and add remaining ingredients. Simmer 2-3
minutes. Also
excellent with fish.
